notes:The Salep is made from this species which is very useful in sea scurvey, diarrhoea, dysentery etc. Sheet may be associated with Arthur Wallis - who produced a paper on the rarer plants of the Chelmsford area.

The orchid has the name Orchis mascula in H@H it is labled Orchis morio, but it looks like a Dactylorhiza to me

From the many sheets I've seen in this style, I agree the collector is A Wallis, his Springfield being the one near Chelmsford - I've edited in.
